Ingredients:
32-36 oz frozen corn (thawed)
1/2 c mayonnaise
1/2 c sour cream
1 1/2 tsp chili powder
1/2 tsp paprika
1/4 tsp cayenne pepper
1/2 tsp garlic powder
1/4 tsp onion powder
1/2 tsp salt
black pepper (a few dashes)
5-10 oz queso fresco (crumbled)
1/2 c cilantro for garnish (optional)
Directions:
1) Mix corn, mayo, sour cream, all seasonings, and 3-5 oz of the queso fresco in a baking dish. (Depending on how cheesy you want it.)
2) After mixing well, smooth out the top. Add another 3-5 oz of queso fresco over the top.
3) Bake at 350 degrees for 30-40 minutes, until bubbly.
