Zuppa Toscana


1lb spicy Italian sausage

8 slices bacon (cooked & diced)

1/2 yellow onion (diced)

2 tsp minced garlic

5-6 medium yellow potatoes (peeled & diced)

32 oz chicken stock

1 cup heavy cream

1 tbs cornstarch

3-4 handfuls fresh spinach

salt & pepper (to taste)

1 tbs olive oil


1) Brown sausage in skillet. Drain, if needed.

2) In same skillet, heat olive oil. Caramelize onions for about 5 minutes.

3) Add garlic for just a few seconds. (It burns quick.)

4) Add sausage, onions, and garlic to crockpot.

5) Add potatoes, cover with chicken stock.

6) Season with salt and pepper.

7) Cook on low 5-6 hours, or high 3-4 hours.

8) When finished, whisk together heavy cream and cornstarch.

9) Add to crockpot, along with spinach and bacon.

10) Cook about 20 more minutes.

11) ENJOY with some dinner rolls.
